Simple Greek Salad with Chicken

Ingredients

2 cups chopped romaine lettuce
1 roasted chicken breast, sliced
1/2 red bell pepper, chopped
1/4 red onion, thinly sliced
1/4 cup Kalamata olives
1/2 cup cherry tomatoes, halved
1/4 cup cucumber slices
2 tablespoons crumbled feta cheese
3 tablespoons Greek dressing

Directions

Add all ingredients to a medium bowl.
Top with dressing and toss to coat.
Serve immediately.

Pro tip: Pack your salad upside down in a mason jar starting, with the dressing at the bottom, for a healthy lunch that won't get soggy while sitting in the fridge all morning. Or pack it up the night before for an easy grab-and-go lunch in the morning.
